Ingredients
  

  • 2 lbs Brussels sprouts trimmed and halved
  • 1 cup turkey bacon or beef bacon finely chopped
  • 2 tbsp olive oil
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp water
  • 1 tbsp fresh thyme or parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss Brussels sprouts with olive oil, salt, and black pepper and spread in a single layer.
  3. Roast for 30–35 minutes, flipping halfway, until caramelized.
  4. Cook bacon in a skillet over medium heat until crispy.
  5. Add onion and sauté until softened, then stir in garlic.
  6. Add brown sugar, vinegar, maple syrup, paprika, and water.
  7. Simmer on low until thick and jam-like.
  8. Spoon bacon jam over roasted Brussels sprouts.
  9. Garnish with fresh herbs and serve immediately.
