  • 1/2 tsp baking soda
  • 1 tsp salt
  • 6 tbsp unsalted butter cold, cubed
  • 3/4 cup milk cold

Sausage Gravy
  • 1 lb turkey sausage no pork
  • 3 tbsp all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • salt to taste
  • paprika a pinch

Equipment

  • Baking Sheet
  • Skillet

Method

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, and salt. Cut in cold butter until crumbly. Stir in milk to form a soft dough.
  3. Turn dough onto a floured surface, pat to 1-inch thickness, cut into rounds, and place on baking sheet.
  4. Bake biscuits for 12–15 minutes until golden. Brush with melted butter and keep warm.
  5. Meanwhile, cook turkey sausage in a skillet over medium heat until browned. Sprinkle flour over sausage and cook 1 minute.
  6. Gradually stir in milk, add seasonings, and simmer 5–7 minutes until thick and creamy.
  7. Split warm biscuits and spoon sausage gravy over the top. Serve immediately.

Notes

This recipe uses turkey sausage instead of pork for a lighter, pork-free version of a classic Southern breakfast.
