Ingredients

For the Smoothie Base
  • 1.5 cup Blackberries frozen
  • 1/4 cup Raw Cashews unsalted, soaked in hot water for 15 minutes and drained if not using a high-speed blender
  • 1 Banana frozen, peeled and sliced
  • 1/2 cup Plant-based Milk e.g., almond, cashew, or oat milk, plus more if needed
  • 1 tsp Maple Syrup or Honey or other preferred sweetener, optional and to taste
  • 1/2 tsp Vanilla Extract
Suggested Toppings
  • 1/4 cup Granola
  • 2 tbsp Fresh Blackberries
  • 1 tbsp Shredded Coconut unsweetened
  • 1 tsp Chia Seeds
  • 1 tbsp Sliced Almonds

Equipment

  • High-Speed Blender
  • Serving Bowl

Method

Prepare the Smoothie Base
  1. Combine the frozen blackberries, raw cashews, frozen banana, plant-based milk, maple syrup (if using), and vanilla extract in a high-speed blender.
  2. Blend on high until completely smooth and creamy. If the mixture is too thick, add a tablespoon of additional plant-based milk at a time, blending after each addition, until your desired consistency is reached. The goal is a thick, spoonable texture, not a drinkable smoothie.
Assemble and Serve
  1. Pour the thick Blackberry Cashew Smoothie into a serving bowl.
  2. Arrange your desired toppings creatively over the smoothie bowl. We recommend granola, fresh blackberries, shredded coconut, chia seeds, and sliced almonds for a delightful mix of textures and flavors.
  3. Serve immediately and enjoy your refreshing and nutritious Blackberry Cashew Smoothie Bowl!

Notes

For an extra boost of protein, add a scoop of your favorite plant-based protein powder to the blender. If you don't have frozen bananas, you can use a fresh banana and add a few ice cubes for thickness, though the texture might be slightly less creamy. Adjust sweetness by adding more or less maple syrup, or omit it entirely if your fruit is sweet enough. This recipe is best enjoyed fresh.
