- Preheat oven to 375°F (190°C). Lightly grease a medium casserole dish with olive oil.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the ground beef and cook, breaking it apart, until browned and fully cooked. Drain excess fat if needed.
- Season with salt, black pepper, thyme, and paprika. Stir in tomato sauce and beef broth. Simmer for 5-7 minutes until slightly thickened. Remove from heat.
- In a bowl, mix heavy cream with a pinch of salt and pepper.
- Layer sliced potatoes in the casserole dish. Add a layer of beef mixture, drizzle cream, and sprinkle mozzarella. Repeat layers, finishing with mozzarella and cheddar on top.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20-25 minutes until potatoes are tender and top is golden and bubbly.
- Let rest for 10 minutes before serving. Garnish with chopped parsley.
Notes
You can substitute ground beef with ground turkey or chicken for a lighter version. Adjust seasoning to taste.
