Ingredients
  

  • 2 cups plain Greek yogurt
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp chia seeds
  • 1/2 cup fresh strawberries sliced
  • 1/2 cup fresh blueberries
  • 1/3 cup granola
  • 1 tbsp chopped walnuts or almonds optional

Method
 

  1. In a bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract until smooth and creamy.
  2. Stir in the chia seeds and let rest for 5 minutes to allow the mixture to thicken slightly.
  3. Wash and prepare the strawberries and blueberries.
  4. Spoon a layer of the chia Greek yogurt into the bottom of a glass or bowl.
  5. Add a layer of granola followed by a layer of fresh fruit.
  6. Repeat the layers until all ingredients are used, finishing with fruit and nuts if desired.
  7. Serve immediately or refrigerate for 30 minutes for a thicker, pudding-like consistency.

Notes

This parfait can be made ahead and stored in the fridge for a quick, nutritious breakfast.
