- In a bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract until smooth and creamy.
- Stir in the chia seeds and let rest for 5 minutes to allow the mixture to thicken slightly.
- Wash and prepare the strawberries and blueberries.
- Spoon a layer of the chia Greek yogurt into the bottom of a glass or bowl.
- Add a layer of granola followed by a layer of fresh fruit.
- Repeat the layers until all ingredients are used, finishing with fruit and nuts if desired.
- Serve immediately or refrigerate for 30 minutes for a thicker, pudding-like consistency.
