- Brown the ground beef with olive oil in a skillet, then add onion and garlic and cook briefly.
- Drain excess fat and transfer beef mixture to the crockpot.
- Add vegetables, diced tomatoes, and beef broth.
- Season with paprika, thyme, oregano, salt, and pepper. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until vegetables are tender.
- Taste, adjust seasoning, garnish with parsley, and serve.

This soup freezes well and tastes even better the next day.
