Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 stalks celery sliced
  • 2 medium potatoes diced
  • 1 cup green beans chopped
  • 1 can diced tomatoes
  • 6 cups beef broth
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • salt and black pepper to taste
  • fresh parsley chopped, for garnish

Method
 

  1. Brown the ground beef with olive oil in a skillet, then add onion and garlic and cook briefly.
  2. Drain excess fat and transfer beef mixture to the crockpot.
  3. Add vegetables, diced tomatoes, and beef broth.
  4. Season with paprika, thyme, oregano, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until vegetables are tender.
  6. Taste, adjust seasoning, garnish with parsley, and serve.

Notes

This soup freezes well and tastes even better the next day.
