Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter softened
Lemon Filling
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 lemon zest zest of 1 lemon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. Combine flour, powdered sugar, and butter until a soft dough forms.
  3. Press the dough evenly into the bottom of the prepared pan.
  4. Bake for 15 minutes until lightly golden.
  5. Whisk eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon mixture over the warm crust.
  7. Bake for 18–20 minutes until the filling is set.
  8. Cool completely before slicing into squares.

Notes

Dust with extra powdered sugar before serving for a classic finish.
