Prepare the Tofu Crumbles
- If not already pressed, press the extra-firm tofu for at least 15 minutes to remove excess water. Crumble the tofu into a mixing bowl.
- Add garlic powder, onion powder, smoked paprika, salt, pepper, and olive oil to the crumbled tofu. Mix well with a spatula or your hands until the tofu is evenly coated.
Cook the Tofu Crumbles
- Preheat your air fryer to 375°F (190°C). Place the seasoned tofu crumbles in a single layer in the air fryer basket.
- Air fry for 8-10 minutes, shaking the basket halfway through, until the tofu is lightly golden and somewhat crispy. Remove from the air fryer and set aside.
Assemble and Cook the Pizza
- Place the high-protein tortilla in the air fryer basket. Spread the marinara sauce evenly over the tortilla, leaving a small border for the crust.
- Sprinkle half of the vegan shredded mozzarella over the sauce. Evenly distribute the cooked tofu crumbles, sliced mushrooms, and chopped bell pepper.
- Top with the fresh spinach, the remaining vegan mozzarella, nutritional yeast, dried oregano (or Italian seasoning), and red pepper flakes (if using).
- Air fry at 375°F (190°C) for 6-8 minutes, or until the cheese is melted and bubbly, and the tortilla edges are golden and crispy. Cooking time may vary based on your air fryer model.
- Carefully remove the pizza from the air fryer. Let it cool for 1-2 minutes before slicing and serving. Enjoy your protein-packed vegan pizza!
Notes
For extra crispiness, you can pre-toast the tortilla in the air fryer for 1-2 minutes before adding toppings. Feel free to customize toppings with other high-protein vegan options like black beans, seitan crumbles, or different vegetables. This pizza is best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 1 day and reheated in the air fryer.
