Fluffy Bread Machine Biscuits

For the Dough
  • 1 cup Milk cold
  • 6 tbsp Unsalted Butter cold, cut into 1/2-inch cubes
  • 3 cups All-Purpose Flour
  • 2 tbsp Granulated Sugar
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 2 tsp Active Dry Yeast
For Finishing
  • 2 tbsp Unsalted Butter melted, for brushing

Method
 

Prepare Dough in Bread Machine
  1. Pour the cold milk into the bread machine pan. Distribute the cold, cubed butter evenly over the milk.
  2. Carefully add the all-purpose flour, sugar, baking powder, and salt to the bread machine pan, creating a mound that covers the wet ingredients.
  3. Make a small indentation on top of the flour mound (do not let it touch the wet ingredients) and add the active dry yeast.
  4. Place the pan into the bread machine and select the "Dough" cycle (this typically takes 1.5 to 2 hours, including kneading and rising). Press start.
Shape and Bake Biscuits
  1. Once the dough cycle is complete, carefully remove the dough from the bread machine pan onto a lightly floured surface. The dough will be soft and slightly tacky.
  2. Gently roll the dough to about 1/2-inch thickness. Using a 2-inch biscuit cutter (or a round glass), cut out biscuits. Rework scraps gently and cut additional biscuits until all dough is used.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the cut biscuits about 1 inch apart on the prepared baking sheet.
  4. Bake for 12-15 minutes, or until the biscuits are golden brown on top and bottom.
  5. As soon as they come out of the oven, brush the tops of the hot biscuits with melted butter. Serve warm with your favorite jam, gravy, or as a side to any meal.

Notes

For extra flaky biscuits, ensure your butter and milk are very cold. Avoid overworking the dough when shaping, as this can lead to tough biscuits; handle gently. Leftover biscuits can be stored in an airtight container at room temperature for up to 2 days, or frozen for longer storage. Reheat gently in the microwave or oven. If your bread machine has a "quick dough" cycle, you can use that to shorten the overall time.
