  • 1/2 cup all-purpose flour
  • 1/2 cup whey protein powder (vanilla or unflavored)
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp granulated sweetener (sugar, erythritol, or monk fruit)
Wet Ingredients
  • 3/4 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tbsp vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract
For Cooking
  • Cooking spray

Method
 

Prepare the Batter
  1. Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or butter if not non-stick.
  2. In a large mixing bowl, whisk together the all-purpose flour, protein powder, baking powder, salt, and granulated sweetener until well combined. Ensure there are no clumps of protein powder.
  3. In a separate small mixing bowl, whisk together the milk, egg, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Whisk just until combined. A few small lumps are okay; do not overmix, as this can lead to tough waffles.
Cook the Waffles
  1. Pour about 1/2 cup of batter onto the hot waffle iron for each waffle (or the amount recommended by your waffle iron's manufacturer). Close the lid.
  2. Cook for 3-5 minutes, or until the waffle is golden brown and steaming stops. Cooking time will vary depending on your waffle iron and desired crispiness.
  3. Carefully remove the cooked waffle and transfer it to a plate. Repeat with the remaining batter.
Serve
  1. Serve immediately with your favorite toppings such as fresh berries, Greek yogurt, maple syrup, or a dollop of nut butter.

Notes

For extra crispy waffles, slightly increase the cooking time and ensure your waffle iron is fully preheated. If making a larger batch, you can keep cooked waffles warm on a wire rack in an oven set to 200°F (93°C). Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a toaster or air fryer for crispiness.
