Prepare the Batter
- Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or butter if not non-stick.
- In a large mixing bowl, whisk together the all-purpose flour, protein powder, baking powder, salt, and granulated sweetener until well combined. Ensure there are no clumps of protein powder.
- In a separate small mixing bowl, whisk together the milk, egg, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Whisk just until combined. A few small lumps are okay; do not overmix, as this can lead to tough waffles.
Cook the Waffles
- Pour about 1/2 cup of batter onto the hot waffle iron for each waffle (or the amount recommended by your waffle iron's manufacturer). Close the lid.
- Cook for 3-5 minutes, or until the waffle is golden brown and steaming stops. Cooking time will vary depending on your waffle iron and desired crispiness.
- Carefully remove the cooked waffle and transfer it to a plate. Repeat with the remaining batter.
Serve
- Serve immediately with your favorite toppings such as fresh berries, Greek yogurt, maple syrup, or a dollop of nut butter.
Notes
For extra crispy waffles, slightly increase the cooking time and ensure your waffle iron is fully preheated. If making a larger batch, you can keep cooked waffles warm on a wire rack in an oven set to 200°F (93°C). Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a toaster or air fryer for crispiness.
