Fresh Tomato Cucumber Avocado Salad

Ingredients
  

For the Salad
  • 2 cups cherry tomatoes halved (or 2 medium, ripe tomatoes, diced)
  • 1 large cucumber English or Persian, diced
  • 2 medium avocados ripe but firm, diced
  • 1/2 small red onion thinly sliced or finely diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped (optional)
For the Lemon-Herb Vinaigrette
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic minced
  • 1/2 tsp dried oregano
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper freshly ground, or to taste

Method
 

Prepare the Salad Ingredients
  1. Wash and pat dry all produce. Halve the cherry tomatoes or dice larger tomatoes.
  2. Dice the cucumber into bite-sized pieces.
  3. Carefully slice and dice the ripe avocados.
  4. Thinly slice or finely dice the red onion.
  5. Chop the fresh parsley and mint (if using).
Combine Salad Ingredients
  1. In a large mixing bowl, gently combine the prepared tomatoes, cucumbers, avocados, red onion, parsley, and mint.
Make the Lemon-Herb Vinaigrette
  1. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined. Taste and adjust seasonings if necessary.
Dress and Serve
  1. Pour the vinaigrette over the salad ingredients in the large mixing bowl.
  2. Gently toss the salad until all ingredients are evenly coated with the dressing. Be careful not to mash the avocado.
  3. Serve immediately as a refreshing side dish or light meal.

Notes

For best results, prepare and serve this Fresh Tomato Cucumber Avocado Salad immediately, as avocado can brown over time. If preparing in advance, add the avocado just before serving and dress the salad right before tossing. Feel free to add other vegetables like bell peppers or chickpeas for extra texture and protein. A sprinkle of crumbled feta cheese also works wonderfully.
