Garlic Herb Crockpot Steak Bites

Ingredients
  

For the Steak
  • 2 lbs sirloin steak cut into 1-inch cubes
For the Garlic Herb Sauce
  • 1.5 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce (or tamari)
  • 1 tbsp Dijon mustard
  • 4 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary crushed
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.25 tsp salt adjust to taste
For Thickening
  • 2 tbsp cornstarch
  • 2 tbsp cold water
For Garnish (Optional)
  • 2 tbsp fresh parsley chopped
  • 1 tbsp olive oil for optional searing

Method
 

Prepare the Steak
  1. Pat the steak bites dry with paper towels. If desired, you can quickly sear them in a hot skillet with 1 tablespoon of olive oil for 1-2 minutes per side before adding to the slow cooker for extra flavor and texture. This step is optional.
Assemble the Crockpot
  1. In a large mixing bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, Dijon mustard, minced garlic, onion powder, garlic powder, dried thyme, crushed rosemary, smoked paprika, black pepper, and salt.
  2. Place the steak bites into the slow cooker. Pour the prepared sauce over the steak bites, ensuring they are mostly submerged.
Slow Cook
  1. Cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours, or until the steak is fork-tender.
Thicken and Serve
  1. Once the steak is cooked, in a small bowl, whisk together the cornstarch and cold water until smooth to create a slurry. Stir the slurry into the slow cooker with the steak and sauce.
  2. Cook on HIGH for another 15-20 minutes, or until the sauce has thickened to your desired consistency.
  3. Ladle the Crockpot Steak Bites and sauce into serving bowls. Garnish with fresh chopped parsley. Serve hot with mashed potatoes, rice, noodles, or crusty bread.

Notes

For best results, choose a good quality sirloin or chuck roast for tenderness. Searing the steak before adding it to the slow cooker adds a deeper, richer flavor and color, but it's an optional step if you're short on time. Taste the sauce before adding the cornstarch slurry and adjust seasonings if needed. You might want more salt or pepper. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
