Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup strawberry or raspberry jam

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the softened butter and powdered sugar together until smooth and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. Gradually mix in the flour and salt until a soft dough forms.
  5. Roll the dough out on a lightly floured surface to about 1/4-inch thickness. Cut out heart shapes and place on baking sheets. Cut a smaller heart from the center of half the cookies.
  6. Bake for 10–12 minutes, until edges are lightly golden. Cool completely.
  7. Spread jam onto the whole cookies and sandwich with the cut-out cookies. Press gently before serving.

Notes

You can dust the finished cookies with powdered sugar for an extra decorative touch.
