Method
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the softened butter and powdered sugar together until smooth and fluffy.
- Add the egg and vanilla extract, mixing until fully combined.
- Gradually mix in the flour and salt until a soft dough forms.
- Roll the dough out on a lightly floured surface to about 1/4-inch thickness. Cut out heart shapes and place on baking sheets. Cut a smaller heart from the center of half the cookies.
- Bake for 10–12 minutes, until edges are lightly golden. Cool completely.
- Spread jam onto the whole cookies and sandwich with the cut-out cookies. Press gently before serving.
Notes
You can dust the finished cookies with powdered sugar for an extra decorative touch.
