- Mix chili powder, paprika, garlic powder, onion powder, salt, pepper, and cayenne in a small bowl.
- Rub chicken with olive oil and coat evenly with the spice mixture.
- Cook chicken in a skillet over medium heat for 5–6 minutes per side until fully cooked. Rest, then slice.
- Whisk together all creamy jalapeño sauce ingredients until smooth.
- Heat a skillet or griddle over medium-low heat and lightly butter the surface.
- Fill tortillas with cheese, sliced chicken, and jalapeño sauce. Fold in half.
- Cook 2–3 minutes per side until golden and cheese is melted.
- Slice into wedges and serve hot.
Notes
For extra authenticity, warm tortillas briefly before assembling and keep heat on medium-low to avoid burning.
