Ingredients
  

Seasoned Chicken
  • 2 large boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
Creamy Jalapeño Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp pickled jalapeños finely minced
  • 1 tsp jalapeño juice
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • salt to taste
Quesadillas
  • 1 cup mozzarella cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup creamy jalapeño sauce prepared
  • 6 large flour tortillas
  • butter for grilling

Method
 

  1. Mix chili powder, paprika, garlic powder, onion powder, salt, pepper, and cayenne in a small bowl.
  2. Rub chicken with olive oil and coat evenly with the spice mixture.
  3. Cook chicken in a skillet over medium heat for 5–6 minutes per side until fully cooked. Rest, then slice.
  4. Whisk together all creamy jalapeño sauce ingredients until smooth.
  5. Heat a skillet or griddle over medium-low heat and lightly butter the surface.
  6. Fill tortillas with cheese, sliced chicken, and jalapeño sauce. Fold in half.
  7. Cook 2–3 minutes per side until golden and cheese is melted.
  8. Slice into wedges and serve hot.

Notes

For extra authenticity, warm tortillas briefly before assembling and keep heat on medium-low to avoid burning.
