Ingredients
  

  • 1 1/2 lb chicken loin or thick chicken breasts
  • 4 jalapeños seeded and finely chopped
  • 6 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt to taste
  • black pepper to taste
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 cup mozzarella cheese shredded
  • fresh chives chopped, for garnish

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken loin lengthwise to create a pocket without cutting all the way through.
  3. In a bowl, mix cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, salt, and black pepper.
  4. Stuff the cheese mixture evenly into the chicken pocket and gently press to close.
  5. Rub the outside of the chicken with olive oil, smoked paprika, salt, and black pepper.
  6. Place the stuffed chicken in a lightly greased baking dish.
  7. Bake uncovered for 35–40 minutes, until the chicken is fully cooked and the filling is bubbly.
  8. Sprinkle mozzarella cheese over the top during the last 5 minutes of baking.
  9. Remove from the oven and let rest for 5 minutes. Garnish with fresh chives before serving.

Notes

For extra heat, leave some jalapeño seeds intact. Serve with a fresh salad or roasted vegetables.
