Keto Ground Turkey Stuffed Peppers

Ingredients
  

  • 4 large bell peppers
  • 1 tbsp olive oil
  • 1 pound ground turkey
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup cauliflower rice
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • salt to taste
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Place peppers upright in a baking dish.
  3. Heat olive oil in a skillet over medium heat. Add onion and sauté for 3–4 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground turkey and cook until browned, breaking it apart as it cooks.
  6. Stir in cauliflower rice, Italian seasoning, paprika, salt, and black pepper. Cook for 3–4 minutes.
  7. Remove from heat and mix in half of the mozzarella and all of the Parmesan cheese.
  8. Spoon the turkey mixture evenly into the bell peppers and top with remaining mozzarella cheese.
  9. Cover loosely with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until peppers are tender and cheese is melted.
  10. Garnish with fresh parsley and serve hot.

Notes

For extra flavor, add a pinch of red pepper flakes or swap mozzarella for provolone.
