- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
- Add the onion and cook for 2–3 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Drain excess fat if needed. Add diced tomatoes with green chilies, chili powder, cumin, salt, and black pepper.
- Reduce heat to low and stir in cream cheese until melted and smooth.
- Add shredded cheddar cheese and mix until creamy and well combined.
- Transfer the mixture to a baking dish and bake for 15–20 minutes until hot and bubbly.
- Garnish with fresh herbs and serve warm.
