Ingredients
  

  • 1 large egg room temperature
  • 1 cup neutral oil such as grapeseed, canola, or sunflower oil
  • 1 tbsp fresh lemon juice or white wine vinegar
  • 1 tsp Dijon mustard optional, but recommended for flavor and stability
  • 1/2 tsp salt
  • pinch black pepper optional

Method
 

Combine Ingredients
  1. Carefully place all ingredients (the room temperature egg, neutral oil, fresh lemon juice or vinegar, Dijon mustard, salt, and black pepper) into a tall, narrow jar or beaker. Ensure the jar is just wide enough for your immersion blender head to fit comfortably and securely at the bottom.
Begin Blending
  1. Insert the immersion blender head all the way to the very bottom of the jar, making sure it completely covers the egg yolk. This initial positioning is crucial for proper emulsification.
  2. Turn the blender on high speed and keep it pressed against the bottom of the jar without moving it for about 15-20 seconds. You will observe the mayonnaise emulsify and turn opaque and thick from the bottom up.
Complete Emulsification
  1. Once the bottom portion has emulsified, slowly begin to lift the immersion blender upwards through the oil, moving it gently up and down. This allows the remaining oil at the top to be incorporated into the creamy mixture. Continue blending for another 30-45 seconds, or until all the oil is fully incorporated and the mayonnaise is thick, smooth, and creamy.
  2. Taste the mayonnaise and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice to achieve your desired flavor profile. Serve immediately or transfer to an airtight container for storage.

Notes

For best results, ensure all ingredients, especially the egg, are at room temperature. This significantly aids in successful emulsification. If your mayonnaise separates or 'breaks', you can sometimes fix it: add a teaspoon of hot water or another egg yolk to a clean bowl, then slowly drizzle the broken mayo into it while blending with the immersion blender.
