Ingredients
  

Cookie Dough
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp maraschino cherry juice from the jar
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Mix-ins & Topping
  • 3/4 cup maraschino cherries alcohol-free, drained and finely chopped
  • 1/2 cup white chocolate chips
  • 1/4 cup powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and granulated sugar together until light and fluffy.
  3. Add the egg, vanilla extract, and cherry juice; mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until a soft dough forms.
  6. Fold in the chopped maraschino cherries and white chocolate chips.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheet.
  8. Bake for 12–14 minutes, until the bottoms are lightly golden and the tops are set.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Dust with powdered sugar before serving.

Notes

Be sure to drain the cherries well to avoid excess moisture in the dough. These cookies stay soft when stored in an airtight container.
