Prepare for Freezing
- Line a large baking sheet with parchment paper. This will prevent the bites from sticking and make them easy to remove after freezing.
Mix the Base
- In a medium mixing bowl, combine the plain full-fat Greek yogurt, creamy natural peanut butter, honey (or maple syrup), and vanilla extract.
- Stir the ingredients vigorously with a spatula or spoon until they are thoroughly combined, smooth, and uniform in color. Ensure no streaks of peanut butter or yogurt remain.
Form the Bites
- Using a small cookie scoop (approximately 1.5 tablespoon size) or two spoons, drop rounded spoonfuls of the yogurt mixture onto the prepared baking sheet. Leave a little space between each bite to prevent them from freezing together.
- If you're using toppings, sprinkle the mini chocolate chips or chopped peanuts evenly over the top of each yogurt bite.
Freeze and Store
- Carefully place the baking sheet in the freezer. Freeze for at least 2 hours, or until the peanut butter frozen yogurt bites are completely firm to the touch.
- Once frozen solid, transfer the bites from the parchment paper to an airtight freezer-safe container or bag. This helps prevent freezer burn.
- Serve directly from the freezer as a delicious and refreshing snack or dessert!
Notes
For the creamiest texture, full-fat Greek yogurt is highly recommended. Low-fat or non-fat varieties will work but may result in a slightly icier bite. Natural peanut butter (just peanuts and salt) blends smoothest. Ensure it's well-stirred before measuring. These bites can be stored in an airtight container in the freezer for up to 2-3 weeks. Feel free to experiment with other toppings like a sprinkle of sea salt, a dash of cinnamon, or even a different type of chopped nut.
