Speedy Broccoli in Savory Garlic Sauce

Ingredients
  

For the Broccoli
  • 2 lbs broccoli fresh, cut into bite-sized florets (stalks peeled and sliced if desired)
  • 1 tbsp olive oil or vegetable oil
  • 1/4 cup water (for steaming in the pan)
For the Garlic Sauce
  • 6 cloves garlic minced
  • 1 tbsp fresh ginger grated (optional)
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp oyster sauce (optional, for umami depth)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil toasted
  • 1 tsp granulated sugar
  • 1 tbsp cornstarch
  • 1/2 cup vegetable broth or water

Method
 

Preparation
  1. Wash and cut the broccoli into bite-sized florets. If using the stalks, peel the tough outer layer and slice them into thin rounds. Set aside.
Make the Sauce
  1. In a small bowl, whisk together the minced garlic, grated ginger (if using), soy sauce, oyster sauce (if using), rice vinegar, sesame oil, sugar, cornstarch, and vegetable broth (or water) until smooth and no lumps of cornstarch remain. Set aside.
Cooking the Broccoli
  1. Heat 1 tablespoon of olive oil (or vegetable oil) in a large skillet or wok over medium-high heat. Add the broccoli florets to the hot skillet. Stir-fry for 2-3 minutes until bright green and slightly tender-crisp.
  2. Add 1/4 cup of water to the skillet, cover immediately, and steam for another 3-4 minutes, or until the broccoli reaches your desired tenderness. Uncover and cook off any remaining water.
Combine and Thicken
  1. Give the prepared garlic sauce a quick re-whisk as cornstarch can settle. Pour the sauce over the cooked broccoli in the skillet.
  2. Bring the sauce to a simmer, stirring constantly. The sauce will thicken quickly, coating the broccoli. Cook for 1-2 minutes until the sauce is glossy and coats the broccoli well.
Serve
  1. Remove from heat and serve immediately. Delicious on its own, or alongside steamed rice, noodles, or your favorite protein.

Notes

For a spicier kick, add 1/2 teaspoon of red pepper flakes along with the garlic in step 3. If you don't have oyster sauce, you can omit it or add an extra teaspoon of soy sauce for flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
