Cookie Dough
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 4 oz cream cheese softened, cubed
  • 3/4 cup fresh strawberries chopped
  • 1/2 cup white chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
  6. Gently fold in the cream cheese cubes, strawberries, and white chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto baking sheets, spacing 2 inches apart.
  8. Bake for 12–14 minutes, until edges are lightly golden and centers are just set.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, gently pat strawberries dry before adding to the dough. Cookies will be soft and slightly cakey.
