Ingredients
  

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tsp vanilla extract
  • granulated sugar for coating

Method
 

  1. Rinse cranberries and discard any soft or damaged ones.
  2. Heat sugar and water in a saucepan over medium heat, stirring until dissolved without boiling.
  3. Remove from heat and stir in vanilla extract.
  4. Add cranberries and gently toss to coat.
  5. Transfer cranberries to a wire rack with a slotted spoon and let dry for 1 hour.
  6. Roll sticky cranberries in extra sugar until fully coated.
  7. Spread on parchment paper and dry for an additional 30–60 minutes before serving.

Use as a garnish for cocktails, cakes, or cheeseboards, or enjoy on their own.
