Ingredients
  

For the Strawberry Filling
  • 1 cup fresh strawberries finely diced or mashed, excess liquid drained
  • 8 oz cream cheese softened, full-fat recommended
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
For the Chocolate Coating
  • 10 oz dark chocolate chips or baking bar good quality, 60-70% cocoa content
  • 1 tsp coconut oil optional, for smoother chocolate
  • 2 tbsp sprinkles or freeze-dried strawberry powder optional, for garnish

Method
 

Prepare the Strawberry Filling
  1. Wash and hull the fresh strawberries. Finely dice or mash them with a fork. It's important to drain any excess liquid to prevent the filling from becoming too soft.
  2. In a medium mixing bowl, beat the softened cream cheese using a hand mixer or spatula until it's smooth and lump-free.
  3. Add the powdered sugar and vanilla extract to the cream cheese. Mix until well combined and the mixture is creamy and light.
  4. Gently fold in the mashed strawberries. Be careful not to overmix, as this can release more liquid from the strawberries.
  5. Cover the bowl and chill the strawberry mixture in the refrigerator for at least 30 minutes, or until it's firm enough to easily roll into balls.
Form the Bites
  1. Line a baking sheet with parchment paper, which will prevent the bites from sticking.
  2. Using a small scoop (about 1 tablespoon) or two spoons, scoop out portions of the chilled strawberry mixture. Roll each portion into a smooth, compact ball. Place the formed bites onto the prepared baking sheet.
  3. Once all the bites are formed, place the baking sheet back into the refrigerator to keep them firm while you prepare the chocolate coating.
Coat in Chocolate
  1. Melt the dark chocolate chips or baking bar. You can do this using a double boiler over simmering water or in a microwave-safe bowl. If microwaving, heat in 30-second intervals, stirring well after each, until the chocolate is completely smooth. If desired, stir in the coconut oil for a slightly thinner and shinier chocolate coating.
  2. Remove the strawberry bites from the refrigerator. Using a fork or a specialized dipping tool, dip each chilled bite into the melted chocolate, ensuring it's fully coated. Lift the bite and gently tap off any excess chocolate.
  3. Carefully place the coated bite back onto the parchment-lined baking sheet. Immediately, if desired, sprinkle with toppings like sprinkles or freeze-dried strawberry powder before the chocolate begins to set.
  4. Repeat the dipping and garnishing process for all remaining strawberry bites.
Chill and Serve
  1. Once all bites are coated and garnished, refrigerate them for at least 30 minutes, or until the chocolate coating is completely set and firm to the touch.
