Prepare the Strawberry Filling

Coat in Chocolate
- Melt the dark chocolate chips or baking bar. You can do this using a double boiler over simmering water or in a microwave-safe bowl. If microwaving, heat in 30-second intervals, stirring well after each, until the chocolate is completely smooth. If desired, stir in the coconut oil for a slightly thinner and shinier chocolate coating.
- Remove the strawberry bites from the refrigerator. Using a fork or a specialized dipping tool, dip each chilled bite into the melted chocolate, ensuring it's fully coated. Lift the bite and gently tap off any excess chocolate.
- Carefully place the coated bite back onto the parchment-lined baking sheet. Immediately, if desired, sprinkle with toppings like sprinkles or freeze-dried strawberry powder before the chocolate begins to set.
- Repeat the dipping and garnishing process for all remaining strawberry bites.
Chill and Serve
- Once all bites are coated and garnished, refrigerate them for at least 30 minutes, or until the chocolate coating is completely set and firm to the touch.
